Finger Limes – Citrus Australasica

"finger limes" "mission beach" If you want to excite a Chef, give him a Finger Lime. This exquisite fruit is a taste sensation, and Chefs refer to it as the Caviar of the citrus fruits. The fruit is cultivated with some success however it is a rainforest tree and will grow best in the wild or simulated environment.

The finger shaped fruits comes in many colours – green, red, yellow, purple and black – and each variety has a slightly different flavour. It has a thin skin with oil cells on the rind, giving it a shiny glossy appearance. Cut the top off and gently squeeze the seeds to the top. You can almost hear the popping!

Whatever the colour, this fruit is simply a taste sensation, with an intense flavour that affects every nerve in the mouth. The taste is likened to lime flavoured caviar, and its tiny seeds literally fill the mouth with an explosion of citrus flavours! Volatile but well balanced. No wonder chefs love them. They are far superior in flavour to the standard lime.

Great in jams, chutneys, sauces, and with seafood, salads and refreshing drinks. A fruit of miraculous harmony.
